Blue Plate Blog Episode 29 “Leftover Lunch and Ponderings”

Entree: My lunch today is amazingly good. Leftover chicken and roasted corn salsa with broken tostada pieces. Holy smoke- it has had a few days to marinate so- yum! The other night I made a homemade pepperoni lasagna that was also exceptionally good. Good food is good for the soul. I love to prepare food, take pictures of food, and eat food. I don’t smoke, drink, or do illicit drugs so food is my “thing.” It brings me joy and tight jeans.

First side: I am cohosting a virtual open mic tonight. What an odd time to be a creative sort. Granted most of my writing has been online for years (like 14 years) so it’s really not a stretch for me.

Second side: Our world is hurting. More than ever we need joy and things of beauty. We need change and progress in huge areas. We need love, light, activism, and leadership. We need….what do you think we need?

Dessert: TGIF- short weeks at work are usually long weeks in that five days of chaos are crammed into four days. This week did not disappoint. Have a great weekend- til next time- order’s up!
